The starred chef Hervé Paulus is already well known in the red city for having officiated in several renowned establishments.

Hervé Paulus will make you dream and titillate your taste buds with a cuisine that respects seasonal products and with taste as its “leitmotif” taste. Working in close collaboration with local suppliers of meat, vegetables, fish and cheese is a priority for the starred chef.

As an example of starters, the chef will propose: a pan-fried escalope of duck foie gras with turnip confit, the famous Monegasque tomato and meat, the carpaccio of scallops with truffles…

For the dishes you will have the choice between a lamb confit with white beans, linguine with meat, turbot with potato mousseline with truffle, fricassee of sweetbreads with morels…

For the gourmands baba au Rhum, Whipped Cream, our Vanilla/Strawberry Iced Vacherin, Orange Blossom Crème brulée….
